Amarant

Amaranth, the "miracle grain of the Incas", has been cultivated in South America for several thousand years and was revered by the Incas as a sacred plant. With its delicate, slightly nutty flavor, it is suitable for salads and sautéed vegetables, as well as as a side dish.

Preparation: Rinse and boil the amaranth in three times the amount of water for 30 minutes and let it swell for another 10 minutes.
