Amarant was a staple food of the Incas and Aztecs and is now considered a crop of the future. Amaranth seeds are nutritionally extremely valuable, especially for their protein content. Plant sources usually do not contain proteins that contain the complete spectrum of essential amino acids, which is why vegetarians should combine different plant sources of protein. Amaranth (like quinoa) is an exception and, moreover, contains a high amount of these proteins. It is therefore an excellent food for vegans and vegetarians who do not consume animal protein. It does not contain gluten, and is therefore also suitable for celiacs.

Amaranth has a wide range of uses in the kitchen thanks to its delicate, slightly nutty flavor, but we probably use it most often instead of rice, couscous or quinoa as a side dish. Cooked amaranth is added to stir-fry (fried mixture with vegetables or meat) instead of rice and used as a stock in soup. If we use more water when cooking amaranth, we can prepare it sweeter than porridge. Amaranth seeds can be ground into flour, which we use to make gluten-free pancakes, porridge, bread and pastries. We can also sprout them. Puffed amaranth is popular: Throw a handful of amaranth on the bottom of a hot heavy pot or pan with a thick bottom, and as soon as the seeds start to pop, cover with a lid, move the pot and let the seeds pop for about 10-15 seconds.
