Chilli Ancho (lat. Capsicum annuum) is known as Poblano pepper before drying. It grows up to 15 cm in length, the width of the pepper does not exceed 7 cm. It comes from Puebla, Mexico. The unripe fruits are dark green, sometimes purple in color, and when ripe the color changes to black.
Chilli Ancho is a mildly hot chili, which is often confused with the Pasilla chili. It is characterized by a fruity, sweet taste with a hint of plums and raisins. You can also find a taste reminiscent of tomatoes or tobacco. They are very mild, but can surprise with pleasant heat. They are dark chocolate to black in color.
Chilli contributes to maintaining normal stomach health, supports hair growth and acts as an antioxidant. It affects fat and carbohydrate metabolism, reduces calorie intake, and is suitable for weight control. It supports thermogenesis - increasing heat production.
Use:
It is especially suitable for sauces - both cold and hot, and is part of the highest quality chili sauces. The seeds are usually removed before use. When crushed, Ancho chili releases a subtle spiciness.
