Spelt pancake mix

Ingredients:Spelt flour type 630 ** 80%, wholemeal flour *, rice flour *, sea salt

* from controlled organic farming

** from biodynamic farming (Demeter)

Preparation:
Add either 300 ml of milk and 3 eggs or 350 ml of mineral water.

Put 3 eggs in a bowl and add the pancake mix and about half of the milk, mix well. Add the remaining milk and mix until smooth. Instead of milk, you can use mineral water or soy drink. Heat a little butter or other fat in a pan over a low heat. Pour the batter into the pan, spread the batter and bake on both sides. Makes 4 pancakes or 8 fritters.

Vegan preparation: Mix the mixture with 350 ml of mineral water or soy drink. Makes 3 pancakes or 6 fritters.
