Caper bush buds must be harvested in the early morning hours, before they have developed. After harvesting, they are pickled in salt water, which preserves their typical taste and firm structure. They are then poured with wine vinegar and gently pasteurized. Capers enhance pizza, vegetable salads, spicy sauces, pasta, cereals and fish dishes. They are also excellent on their own on bread with butter or in sandwiches.
