Black tea with golden tips

Mr. Kamfan's factory is located on the outskirts of the northern province of Phongsaly. He buys the tea leaves for his production in the village of Saylom, in the Phu Noi tribal settlement. The leaves of the uncultivated Camellia sinensis contain significantly more valuable ingredients than conventional plant products. The polyphenol values are up to 85% higher than in the new cultivated varieties. This high polyphenol content contributes significantly to the strong, chocolatey aroma of Golden Saylom. After drying and rolling, the leaves are fermented in the absence of oxygen, and some of the polyphenols are converted into flavonoids. The more polyphenols a tea leaf contains, the more flavonoids, i.e. flavors, the black tea has. This type of fermentation is based on the thousand-year-old Dian Hong tea method, used by mountain tribes. It is still produced today in the southern Chinese province of Yunnan. Dian Hong is the mother of the so-called red teas in Asia. From this, the black teas known in the West in the 16th century arose. Golden Saylom (“Golden” due to the many leaf buds) is an organic black tea that does not become bitter even after a long brewing and has a pleasant basic sweetness. Still, it is good with milk or cream and if you want, you can add Kluntje and enjoy it as an East Frisian tea.

Preparation: Rinse the teapot with hot water before use. 1/2 to 1 teaspoon per cup. Place black tea in a filter bag and brew with boiling water. Let it steep for 3 minutes.
