Hispanic sage, known as Chia, is an herb growing up to one meter tall with white or purple flowers. Chia is difficult to grow and is native to Central and South America, which provide it with ideal climatic conditions. The chia plant is grown for its seeds, which have high nutritional value.
Chia seeds are small ovals about 1 mm in size, with brown, gray, black and white spots. In Aztec times, chia seeds were one of the four main foods. Chia was consumed ground into flour, pressed into oil, but also alone as an ingredient in various dishes. Chia seeds, with their excellent nutritional value, were an essential source of nutrients for warriors and a way to maintain excellent physical condition during long, demanding expeditions.
Uses:
Not only for the large amount of proteins* that contribute to the growth of muscle mass, its maintenance and the maintenance of normal bone condition, chia seeds are used by athletes. They are also sought after for their excellent hydrophilic properties. They hold a large amount of water, thanks to which they can increase their volume up to twelve times. By binding water to chia seeds, a gel is formed (in a ratio of 1 part seeds to 9 parts water), thanks to which the body is very well hydrated from the inside and prepared for demanding sports performances. Thanks to these abilities, chia seeds are sometimes nicknamed runners' seeds. Chia seeds can become a desirable part of the diet of celiacs or people who must follow a gluten-free diet. Chia seeds do not contain any gluten. The excellent nutritional value of chia seeds will be used primarily by elderly people, athletes, people on a healthy weight loss diet, or vegetarians and vegans to supplement their diet. It can be consumed by anyone who likes healthy nutrition and wants to treat their body to quality food.

Novel food
Chia seeds were in accordance with Regulation (EC) No. 258/97 of 27 January 1997 concerning novel foods and novel food ingredients, authorised to be placed on the market as a novel food by Commission Decision No 2009/827/EC. Their use was extended by Commission Decision No 2013/50/EC.
