Chickpeas, or Roman peas, are a popular Middle Eastern legume and the basis of the popular falafel and hummus spread. We use cooked chickpeas in vegetable mixtures and curries, cold in salads, or blended as the basis for delicious spreads. When preparing, soak the chickpeas overnight and cook in the same water for about 2 hours until soft or in a steamer for about 25 minutes.
