Chickpeas, or Roman peas, belong to the same group of legumes as beans or lentils. Chickpeas contain almost all vitamins and minerals. They contain large amounts of iron, calcium, potassium, manganese and magnesium. In addition, they are high in healthy fats and fiber. Chickpeas must be soaked for at least 4 hours, ideally up to eight. Depending on the soaking time, they are then cooked for 2-3 hours. You can prepare them in a pressure cooker in 40 minutes. Soak the chickpeas in salt water, they will soften faster. Salt will also improve their taste and even cooking. After cooking, you can use the water to whip up stiff snow like from egg whites. The snow can then be used for baking or sweet meringues in a vegan version. Roman peas are obtained from a plant called the chickpea. It was domesticated 7,000 years ago in the area around Turkey and Syria. Today, it is mainly grown and used in India. The fruit of the plant is a pod with up to ten spherical seeds of a yellowish color. It is the third most widespread legume in the world, after peas and beans.Nutritional values
