The full chocolate flavor of Méďa comes from non-alkalized cocoa grown by small farmers in the Dominican Republic. The cocoa trees here grow in mixed crops with citrus, bananas and other crops that provide them with shade. The fruits are hand-picked and fermented together with the pulp. The cocoa content is double that of most cocoa drinks on the market, which is why Méďa stands out with a distinct cocoa flavor and is not oversweetened. Méďa is sweetened with dried rapadura sugarcane juice, which is created by slowly thickening the juice pressed from the sugarcane. The molasses is not removed from the sugarcane juice, which is why all the minerals present remain in the rapadura. Rapadura comes from Brazil, where crop rotation is used to preserve the fertility of the land. Sugarcane is harvested by hand with a machete. The leaves are cut from the stems and left in the field as fertilizer. Farmers here do not burn the fields before harvesting. Both cocoa and rapadura come from a fair trade project. Fair trade guarantees fair remuneration to farmers from developing countries and prohibits slave and child labor.

USE: Dissolve the honey in warm cow's, goat's or soy milk, but it can also be used in yogurts, corn flakes, muesli mixtures and in baking. Dissolve in hot, whipped whole milk to obtain an excellent fragrant hot "chocolate" with foam.
