Choya Silver fruit wine, light gold in color, is made from ripe Japanese umeboshi plums. The plums are pickled in shochu, a rice brandy to which sugar is added. The wine has a distinctive plum flavor and aroma, which it acquires over the course of one year of aging. It tastes best when well chilled. It can be used to prepare various cocktails. However, it is most recommended as an aperitif. Traditional Japanese and Chinese cuisine cannot do without plum wine, where it is added to a wide range of recipes.
