Soy flour is a source of valuable proteins. It should only be used as a supplementary flour to flour containing gluten. Soy is alkaline and has a high content of a number of valuable minerals, vitamins B1 and B3, lecithin, calcium and magnesium. It has a beneficial effect on the nervous system. Soy lecithin acts as an emulsifier, just like the lecithin contained in eggs. By adding 3-5% of soy flour to baked goods, we can replace eggs and significantly extend their shelf life. For baked goods that are not leavened with yeast, we can replace regular flour up to 1/4 of the total dose with soy flour.Nutritional values
