Cocoa beans are grown by small farmers in the Dominican Republic. The cocoa trees grow in mixed crops here with citrus, bananas and other crops that provide them with shade. The fruits are hand-picked and fermented together with the pulp. The fermentation creates the typical strong taste and aroma of Dominican cocoa. This is followed by about a week of drying in the sun, after which the beans are cleaned and roasted. Proper, gentle roasting will further enhance the taste and aroma of cocoa. The roasted beans are crushed and removed from part of the cocoa butter using a press. They are then ground into a fine powder. The cocoa is not alkalized.

TIP: A delicious chocolate drink is obtained by whisking warm milk with our cocoa and dried rapadura cane juice. We can scent it with a pinch of real Bourbon vanilla, cinnamon or even mace. Passionate people can add a little chili powder, gourmets can enhance their milk with sweet cream.
