Coconut paste is made from the flesh of fresh coconuts, which is very finely ground into a smooth paste. It has a wonderful coconut flavor and aroma and is used in curries, Asian dishes, baking, as a spread and base for sauces and soups, smoothies and desserts. It does not contain emulsifiers, so at lower temperatures the oil settles on the surface. You can heat it slightly in a water bath and mix before use.
