Kimchi is a traditional Korean specialty. It is an unpasteurized fermented milk mixture of vegetables, which is traditionally seasoned with fish sauce, garlic and chili peppers. In this vegan version, however, the fish sauce is replaced with shoyu soy sauce. Kimchi is served as a side dish or salad, and can also be used to season cooked dishes.
Svobodný statek na soutoku is a non-profit organization that was founded in 2012 with the aim of continuing the agricultural activities previously carried out under the auspices of Camphill České Kopista. The company offers organic vegetables and other products produced mainly by hand on the farm and also engages in a number of other activities related to biodynamic agriculture. People with special needs who participate in agricultural and processing activities help in the operation of the company, which gives them the opportunity to integrate into society.
