Peruvian cocoa has a unique balanced flavor and is renowned among lovers of this crop. Local varieties of cocoa beans are purchased from associations of small growers, after fermentation the flavor is enhanced by a short roasting and the cocoa beans are crushed without the skin. It is suitable for direct snacking, desserts and baked sweets. We can also mix them into powder and use them as fragrant cocoa with an unreduced cocoa butter content.
