A very interesting chocolate made from a single type of cocoa that will surprise you with a balanced, full taste with fruity notes. The chocolate is made from cocoa beans from the São Tomé and Príncipe region. This small equatorial state is made up of a group of islands of volcanic origin on the west African coast and is also called the Chocolate Island. The volcanic soil is very fertile and the local temperatures, humidity and shade provided by the lush vegetation are ideal for cocoa trees. It was here that the first cocoa trees imported from Brazil to Africa were planted as decorative plants in the early nineteenth century. The Portuguese introduced commercial cultivation of cocoa beans to the islands, and in the nineteenth century the islands were among the leading producers of cocoa beans. Thanks to the ideal climate, it was a very lucrative business with a sought-after raw material - lucrative for the Portuguese. The local population had to work as slave labor on the plantations. Even after the colonizers left, the situation did not improve much; raw cocoa beans of average quality, which were bought by traders and transported for further processing (fermentation and drying) to continental Africa, did not provide much profit. The island state's economy was nevertheless based on this single crop, and any fluctuations in price or production were immediately noticeable. At the turn of the millennium, the International Fund for Agricultural Development (UN) approached the French company KAOKA with a request to conduct an audit of cocoa cultivation in São Tomé and Príncipe. The audit concluded that, thanks to the genetic diversity of local cocoa varieties, aromatic cocoa of first-class quality could be obtained exclusively from local sources. Another advantage turned out to be the use of traditional cultivation methods, which could be easily adapted to meet the requirements of organic farming. The combination of high-quality cocoa from a unique origin, a fair trade approach and organic origin (i.e. certified organic production) could provide a significantly higher and more stable income for local farmers. Based on this audit, the International Fund for Agricultural Development decided in 2000 to finance a three-year program involving 500 farmers. Under the supervision of KAOKA, the transition took place from fragmented production of average-quality raw cocoa beans to fermented and dried cocoa beans of top quality, grown under fair trade and organic conditions. Gradually, it was possible to unite farmers and create the infrastructure necessary for post-harvest processing of cocoa beans. The farmers' organization CECAB now supports 27 farmer cooperatives, representing around 2,700 families. In addition to overseeing the projects developed by CECAB, KAOKA is currently also focusing on improving access to education for the children of cocoa farmers.
Cocoa and vanilla come from the fair trade project Bio Equitable. Fair trade guarantees fair remuneration to farmers from developing countries and prohibits slave and child labor.
