White Quinoa

Quinoa, also known as Inca rice, has been cultivated in the Andes for several thousand years and was worshipped as a sacred plant by the Incas. With its delicate, slightly nutty flavor, it is great as a side dish, in sautéed vegetables and salads, and finely ground to prepare sweet and savory pancakes.

Preparation: Rinse the quinoa and cook with twice the amount of water over low heat for about 20 minutes, until the water is completely absorbed.
