Miso is a traditional fermented paste originating from Japan. The main ingredient is the so-called Aspergillus Oryzae, or kōji in Czech – a fungal culture that is grown on rice or other cereals. Koji uses its enzymes to break down starches into sugars, and is used in the production of sake, soy sauce, or miso paste. This miso is light in color, has a sweet-salty taste, and is finely ground. It is grown on whole grain organic rice and Czech organic peas provide protein. It has versatile uses as a seasoning paste, it can be a great base for soup, or it can be used to flavor sauces, dressings, or vegetables. Miso paste is fermented and not pasteurized.
