Garam masala is a spice mixture that is especially popular in India. It comes from the northeast of India - Rajasthan. It is part of many local dishes, such as pilaf or biryani. It is suitable as an ingredient in yogurt dishes. Garam masala has a pleasant, fresh aroma. The taste of the mixture itself is cumin with a hint of turmeric, slightly spicy, overall balanced. It does not contain salt.
Ingredients: Coriander, cumin, turmeric, chili, fennel, cinnamon, bay leaf, cardamom, mace, nutmeg, cloves, fenugreek, white pepper.
Uses:
Garam masala is excellent for both meat and vegetarian cuisine. It is a universal spice mixture. It is recommended for grilled and roasted meats or minute dishes, as well as for minced meat and for preparing roasted chicken. It enhances the taste of legumes, especially beans and lentils, and also goes well in rice dishes.
Aloo Matar
For two servings we need:
- ¼ cup vegetable oil,
- 2 medium onions,
- 1 tablespoon garlic-ginger paste,
- 1 bay leaf,
- 4 large potatoes,
- 1 cup peas,
- ½ cup tomato puree,
- 1.5 teaspoons garam masala,
- 1.5 teaspoons paprika,
- 1 teaspoon each of salt and sugar,
- 2 tablespoons chopped coriander.
Procedure: In a wok Heat the oil over a low heat and add the chopped onion, paste and bay leaf. Cook until the onion is soft and then mix with the peas and peeled potatoes cut into small pieces. Cover and cook until the potatoes are soft - about 15 minutes. Then remove the bay leaf, add the tomato puree, garam masala, paprika, salt, sugar and cook for another 10 minutes. Finally, stir in the coriander and cook for 2 minutes. Ready to serve.
Storage: Keep dry and tightly closed.
