Hand-picked green olives are fermented for several months. After the fermentation process is complete, the pit is removed, the olives are filled with garlic and pickled in a brine consisting only of water, wine vinegar and salt. Thanks to the traditional method of removing bitterness without the use of lye, the olives retain not only their authentic aroma and taste, but also all their nutrients.
