Hand-picked green olives ferment for several months, then are pickled in a brine made only from water, salt, wine vinegar and organic lemon juice. Thanks to the traditional method of removing bitterness without the use of lye, the olives retain not only their authentic taste and aroma, but also all their nutrients.
