Judas' ear (lat. Hirneola auricula judae) is a widely growing mushroom with a gelatinous, soft, even sticky surface. For a long time it was considered an inedible mushroom and was not processed as a food. It only began to gain its place in the twentieth century. Judas' ear grows all over the world. It grows on older wood, most often on elderberry trunks. The name comes from the belief that the traitor Judas Iscariot hanged himself on an elderberry. Elderberry is also the source of its other name, elderberry boletus. While Judas' ear is not widely consumed in the West, it is highly valued in China, not only in gastronomy.
Mushrooms such as Judas' ear, oyster mushroom and Shiitake are very suitable dietary supplements for their excellent taste. Thanks to its excellent taste, these mushrooms can be easily added to and enriched with ordinary dishes, and thus make the most of their properties.

Traditional use: Judas ear must be boiled before consumption. It is used in spicy mixtures with meat, in soups, in coleslaw, and as a snack it has a wide range of uses. Due to its ability to absorb moisture, for example, ground is excellent for thickening soups and sauces.
