Wild coffee, medium roast beans
It comes from the eponymous Ethiopian region, which was the original home of all coffee. Here in southwestern Ethiopia, Coffea arabica still ripens wild in the rainforest today, just as it has for tens of thousands of years. Through the collection of wild beans and the direct trade in native foods at prices significantly above world market levels, more than 15,000 local families receive a regular income. Through this sustainable use of the rainforest in designated zones, they have been committed to its protection and conservation since 2003. Thanks to the ideal, natural growing conditions and low crop yields, a unique aroma is concentrated in wild Arabica beans. Just as well-tended vineyards produce different wines depending on the soil and location, wild varieties from different forest areas, to which they have adapted over thousands of years, have different characters. Some taste fruity, others strong and tart, others light and floral. In numerous tastings, we determine the perfect roast depth for each provenance and also the ideal composition of the individual provenances for each roast level (Blond Roast, Medium Roast or Espresso Roast). In order to optimally emphasize the unique character of the locations used, the coffee beans are roasted slowly and gently in small batches at a temperature of around 200 °C in a drum roaster according to old artisanal tradition.
