Lemon pepper is a spice blend containing white pepper and lemon peel. White pepper is the fruit of the black pepper plant, an evergreen vine that grows up to four meters long. The harvested part of the pepper plant is the fruit, which is known according to the processing method as black, white or green pepper.
The content of this spice blend is white pepper, which is obtained from ripe berries by soaking in water and removing the peel. White pepper is sharper and more distinct in taste and aroma compared to conventional pepper. Lemon zest fine-tunes the spiciness and aroma of the dominant white pepper.
Ingredients: White pepper, lemon zest 20%.
Use:
Lemon pepper adds a pleasant, peppery sour taste to sea and freshwater fish and fruit, meat stews and spicy sauces. The advantage of white pepper is that it does not discolor light sauces.
Lemon Pepper Perch
For two servings we need:
- 2 tablespoons of butter,
- 1 teaspoon of olive oil,
- 4 fillets of tilapia (Nile perch),
- lemon pepper,
- salt to taste.
Procedure: Heat the butter in a pan and then add the oil. In the meantime, prepare the fillets, salt them and sprinkle with lemon pepper. Place them in the pan and fry for about three minutes on each side. We recommend stewing for another four minutes, e.g. with vegetables.
Storage: Keep dry and tightly closed.
