Maha masala is a spice blend inspired by Indian cuisine, with a very wide range of uses. The blend has a full flavor and a distinctive aroma of cumin and coriander. Maha will enhance the flavor of the prepared dish and give it oriental tones of Indian cuisine.
Ingredients: ground cumin, ground coriander, ground white and black mustard, ground cumin, ground cardamom, ground onion
Use: The blend is intended for basic seasoning of soups, vegetable dishes, spreads, meat, but also salads. It does not create the main flavor of the dish, but rather underlines and enhances the flavor of other ingredients. It is mainly used in vegetarian cuisine.
Red lentil spread – we need:
- 5 tablespoons of olive oil;
- 1 onion, diced;
- 3 cloves of garlic;
- 1 carrot, grated on a coarse grater;
- 0.5 l of water;
- 1 teaspoon of Maha masala spice mixture;
- salt to taste.
Procedure: Fry the onion and crushed garlic in oil. After a while, add the grated carrot and a teaspoon of spices, fry together, stirring occasionally. Add the rinsed and drained lentils to the fried vegetables and fry together for about 5 minutes. The lentils must be well mixed with oil so that they do not burn. Then pour 0.5 l of water over the mixture and cook for 15–20 minutes, stirring occasionally, until all the water has boiled away. Stirring occasionally during cooking will give the lentils a “spreadable” consistency. Season the mixture with salt and let it cool. Serve with pastries and garnish with fresh vegetables to taste.
Storage: Keep dry and close tightly.
