Ingredients: 100% dried mushrooms. Shiitake, also known as edible shiitake, is known for its content of vitamins and substances beneficial to health and is therefore a suitable part of a regular diet. It is also a traditional part of Japanese cuisine, especially when preparing sushi. Although fresh shiitake is also edible, dried is preferred due to its better taste. Preparation: Rinse the mushrooms first and then soak them in cold water for at least 60 minutes. Then cut off the stems to make them more rigid and place the caps in a saucepan with water so that they are submerged. For 10 mushrooms, add 4 tablespoons of sugar and 3 tablespoons of cooking soy sauce (preferably Sempío). Cook over low heat until most of the liquid has evaporated and a thick sugary solution has formed in the saucepan with the mushrooms. Add 1 tablespoon of rice wine (or 1 tablespoon of cooking soy sauce) and coat the mushrooms in the now diluted solution. Slice the mushrooms and serve them as a side dish with your rice or use them as an ingredient in sushi.
