These small green beans are very popular in Chinese and Indian cuisine. We use boiled mung beans in thick vegetable soups, in mixtures with vegetables or meat and as a base for vegetarian meatballs. However, mung beans are best known in their second form, as sprouts. These are the most commonly used sprouts in the world. Depending on how long we let the mung sprout, we get either short sprouts for snacking and in salads, or long crispy sprouts, which are excellent when stir-fried in Asian dishes.
The basic preparation of mung beans is relatively quick. We do not need to soak the beans, bring 3 cups of water to a boil, add 1 cup of beans and cook over low heat for about 40 minutes until soft.
Sprouting mung beans: Rinse the beans in water, put them in a wide-mouthed mason jar and add enough water to cover them. Let them soak overnight, then drain the water, rinse well and let them drain. Return the beans to the canning jar, cover the neck with a piece of cloth or paper and let them sprout in a semi-bright, cooler place. Rinse and drain every 8 hours. Let them sprout for 2-4 days, depending on how big you want the sprouts to be. Finally, rinse and store in the refrigerator for up to several weeks.
