The olives come from Azienda Agricola - Francesca Surdo, a two-family farm in the heart of Calabria in southern Italy, which has been run for three generations. In addition to the fabulous backdrop of a beautiful lake protected by WWF in the middle of the "Parco Nationale Delle Serre" nature reserve, there is also an olive grove. The trees growing on the 160 hectares of Azienda Agricola are 150 to 200 years old and reach up to 10 magnificent meters. Younger olive trees grow in their protection. The type of olive used for Naturata olive oil is called Ottobratica and guarantees an exceptional Mediterranean taste. In addition to this olive variety, the very old Carolea and Roggianella varieties are also grown. The mixture of these three types of olives creates the quality and unique taste of this olive oil. In order to obtain the fine Naturata olive oil from Italy, farmers began harvesting their olives in November.
All Naturata Demeter olive oils carry the “extra virgin” quality label. This guarantees compliance with a number of quality parameters. Only mechanical processes are used to produce the oil. The limits for the acidity number and peroxide number are strictly regulated. In addition, there must be no sensory errors. The acidity number indicates the proportion of free fatty acids (calculated as oleic acid). The longer the olive is stored in the oil mill between the ideal state of ripeness and processing, the more the proportion of free fatty acids increases. The lower the proportion of free fatty acids, the better the quality of the oil. A low peroxide value also indicates that the olives are processed quickly and that the oil is fresh. Only with the best values can an olive oil be called “extra virgin”. No other edible oil offers such a diverse range of flavour nuances (from mild to slightly bitter to full-bodied fruity). As with wine, the taste depends directly on the variety, growing region, harvest time and climate. Olive oils are therefore versatile. Use it to prepare salads and pesto sauces, in pasta and vegetable dishes. Olive oil is particularly popular in Mediterranean dishes due to its characteristic taste. Compared to other native edible oils, olive oil is also suitable for frying due to its fatty acid composition (due to the high proportion of the stable monounsaturated fatty acid oleic acid).
