This durum wheat pasta is made from semolina, which is comparable in terms of grinding to regular wheat flour with type numbers between 550 and 812. To make the dough, the semolina is continuously mixed with water and kneaded until the desired consistency is reached. dough, which is pressed through suitable dies. During each stage of the drying process, care is taken to ensure that the moisture is not removed from the pasta too quickly, so that the shapes have a good surface structure. Depending on the shape, the drying temperatures range between 70 and 100 °C.
