Minestrone with vegetarian rice

Classic minestrone is a delicate vegetable soup from the Italian countryside. It is traditionally prepared with various vegetables: potatoes, tomatoes, carrots, leeks, celery or peas. In northern Italy, Lombardy, long-grain rice is used in soups, while in Liguria and Tuscany, pasta is usually used. This turns minestrone into a healthy and invigorating dish.
