Coconut flour is obtained by first partially removing coconut oil from grated coconut pulp (so-called copra), and then grinding the resulting mass very finely. Coconut flour gives the dish a delicate sweet coconut taste and aroma. We use it in smoothies, yogurts and cereals, to which it adds not only taste, but also protein. When baking, we can replace up to 20% of wheat flour with coconut flour, and we also add it to Asian soups, sauces and curries. It is a great base for coconut creams and fillings. From a nutritional point of view, it is a rich source of fiber and also supplies the body with protein.
