This 100% almond paste is made from unroasted, peeled European almonds. It has a more pronounced marzipan taste and aroma and is especially suitable for preparing desserts, is excellent for pastries (can be combined with honey, maple syrup, raisins...), for softening desserts, for baking (in cakes, cakes or biscuits), in yoghurt, milkshakes and muesli, for flavouring vegetable dishes and as a base for salad dressings. It naturally contains high-quality unsaturated oils, vitamins and minerals. Almond paste contains a significant amount of calcium and is particularly rich in magnesium and vitamin E. Since no additives such as hydrogenated fats or emulsifiers are used, almond oil may separate. This phenomenon is not a defect in quality and it is enough to stir the paste before use.

Almond milk: By mixing a spoonful of almond paste with 250 ml of hot water and a few drops of high-quality cold-pressed oil, we obtain almond milk. Sweeten to taste with honey, maple syrup or rapadura, for example. If you want to use almond milk for very young children, we recommend using almond paste made from 100% sweet California almonds. In Europe, an original variety of almonds grows wild, which has bitter fruits. This variety can withstand the harsh dry climate much better than the cultivated almond-bearing sweet almonds. Therefore, sweet almonds are grown by grafting them onto the rootstock of a bitter variety. The branches sprouting under the graft therefore produce bitter almonds, and unless these branches are pruned in time, bitter almonds will be among the fruits. Growers naturally try to keep the amount of bitter almonds to a minimum, but once the almonds are harvested, it is impossible to separate the sweet almonds from the bitter ones. The very low proportion of bitter almonds then causes the resulting almond paste from European almonds to have a pleasant marzipan taste and aroma, but for small children, a paste made from 100% sweet California almonds is more suitable.
