The Incas called quinoa the mother of grains, even though it is not actually a grain, but the seeds of a type of quinoa. Quinoa contains a high amount of protein, which is why vegans seek it out. We use quinoa as a side dish instead of rice or potatoes, as a base for hearty salads and a filling for soups, and for preparing sweet porridges and casseroles.

PREPARATION: Rinse with cold water and add 2 cups of water to 1 cup of quinoa. Bring to a boil and cook for about 15 minutes "to the bite".
