Eggless rice paper, Vietnamese “banh trang” or “banh da nem”, is a translucent dried pasta containing white rice, water and sometimes tapioca flour. After being shaped into a flat shape, it is steamed, then dried in the sun on bamboo mats, which give the surface of the sheet an unmistakable pattern. It is available in various thicknesses. This popular food in Vietnam and Thailand has a bland taste, making it suitable for almost any filling, whether it is chicken, shrimp, fish or pasta with vegetables. It is very often used in “nem” dishes, for example in the very popular spring rolls.
