Jimmy's food story: When I was a little boy, I tasted dried meat somewhere, and I liked it so much that I immediately started drying it myself in various ways – on the heater, over the fireplace, in the sun, in the oven, or just in a draft. I really dried everything and over time I started to get really good at it. After high school, I traveled the world for a while. Wherever I was, I tasted local jerky and the idea started to cross my mind that when I returned home, I had to start experimenting. With flavors and methods of preparation. I dried it in the oven and the meat tasted so good that my friends started telling me to sell it. I bought those dealer bags at a stationery store and made labels in Malování. Then I gave my friends the first batch to sell under the counter in the pub. When I asked them after a while how it was going, I found out that not a single package had been sold because the bartenders had eaten everything that same day. When this happened to me a few times and everyone I gave a taste to became a regular customer, I said to myself: "OK, I'm going all in." I rented a room in an old factory and converted it into a butcher's shop. And after a very long and comical ordeal, when a person with no experience with the authorities tries to legalize a meat production facility, I finally started drying on a large scale. I've come a long way since then, but I still make meat with the same love and enthusiasm as I did in the beginning. Storage: Store in a dry and dark place at a temperature of 1-25°C. Consume within two days after opening.
