Spelt Tiger Cookies

Tiger nuts (Cyperus esculentus) were an important crop and medicinal plant for the ancient Egyptians. Within Europe, they are now popular mainly in Spain. The hazelnut-sized root nodules are dried and ground after harvest.

Fine tiger nut flour gives these spelt cookies a natural sweetness and a full flavor reminiscent of chestnuts or walnuts. Tiger nuts are high in fiber, which regulates the intestines. The pastry is ideal as a snack as part of a complete diet.
