Bulgur
It is made from durum wheat. The whole grain is gently processed using water and heat. This process makes the grain more digestible. The subsequent drying process ensures that the grain can fully develop its original flavor before it is then ground in a mill. Bulgur is excellent as a side dish, in salads or in a meatball mixture.
Ingredients: Durum wheat**
**from biodynamic farming (demeter)
Preparation: Cover the bulgur with 1½times the amount of water, lightly salt it and bring to the boil. Let it swell over low heat for approx. 10 minutes.
Store in a cool, dry place.
