Ume paste is made from pickled ume fruits, ume vinegar (liquid from pickled ume fruits) and pickled shiso leaves. Ume is a Japanese superfruit that has a strong, salty and sour taste. A taste you rarely come across!
In Japan, ume paste is often served alongside food. You can also use it to season rice, in a dressing or as a dipping sauce for sushi.
