Thai curry is a spice preparation that differs from Indian curry mainly in its spiciness and turmeric content - Thai curry contains a smaller amount. The taste is spicy with chili and pepper.
Ingredients: Turmeric, paprika, coriander, cumin, fenugreek, chili, pepper, ginger, onion.
Usage:
Thai curry spice is best used in meat and vegetable mixtures, as well as in legumes, cream sauces and soups.
For Thai chicken curry we need:
- 2 shallots or 1 onion,
- 1 lemongrass,
- 1 tablespoon vegetable oil,
- 2 tablespoons Thai curry,
- 4 chicken breasts (diced),
- 1 tablespoon fish sauce,
- 1 teaspoon sugar (preferably brown),
- lime juice,
- 400 ml coconut milk,
- 20 g coriander.
Procedure: Heat the oil in a wok, add the diced shallot and sauté until translucent. Then add the chicken pieces, spices, fish sauce, coconut milk. Bring to the boil and leave on a low heat for 15 minutes. - be careful, do not cover. Taste towards the end of the boil and season with Thai curry spices or coriander to taste. Serve with basmati or jasmine rice.
Storage: Keep dry and close tightly.
