Tzatziki (Zaziki) is a seasoning preparation - an original Greek mixture, which we use in yogurts, mayonnaises and salads. It is used in pea soup and potato pancakes. It has a pleasant aroma and taste of garlic and pepper, which are contained in it.
Ingredients: Salt (max. 32%), garlic, dill, capsicum, white pepper.
Use:
Tzatziki is used mainly to prepare the tzatziki sauce of the same name. We can also try it in vegetable salads or on grilled vegetables. Thanks to its coarser processing, it also acts as a decorative element.
Greek tzatziki sauce
We need:
- 1 cup of real Greek yogurt,
- 1 tablespoon of lemon juice,
- 1 cucumber,
- 1 tablespoon of tzatziki.
Procedure: Cut or grate the peeled cucumber into fine strips and lightly salt it. Place it in a colander, weigh it down to remove excess water. After 30 minutes, remove the weight and dry the cucumber with a paper towel. Add it to the real Greek yogurt along with the other ingredients and mix thoroughly. Let it sit in the refrigerator for at least two hours to let the flavors blend. For a thinner sauce, skip the cucumber draining process. You can replace the Greek yogurt with full-fat white yogurt, which you can mix with cottage cheese or sour cream. Serve the finished sauce with grilled meat or vegetables.
Storage: Keep dry and tightly closed.
