During the production (fermentation) of umeboshi plums, the waste product is ume-su, or ume vinegar. In the modern production method, undried plums are pickled to leave more liquid. However, from a chemical point of view, it has nothing to do with vinegar. Ume vinegar has a salty-sour taste, and even though it has the word vinegar in its name, it rather salts the food than sours it. It contains a large amount of minerals, enzymes and vitamins in an absorbable form. We use it in the kitchen to season any food (soups, sauces, legumes), it can also be used in salads and dressings. Just anywhere you like.
