Product detailed description

During the production (fermentation) of umeboshi, the red water ume-su, or ume vinegar, is produced as a waste product. In the modern production method, undried plums are pickled to leave more liquid. However, from a chemical point of view, it has nothing to do with vinegar. Ume vinegar has a salty-sour taste, and even though it has the word vinegar in its name, it rather salts the food than sours it. It contains a large amount of minerals, enzymes and vitamins in an absorbable form. Ume vinegar is used in the kitchen to season any food (soups, sauces, legumes) and can also be used in salads and dressings. Just anywhere you like.
