These organic cocoa beans are simply air-dried and cleaned without roasting after fermentation. They are suitable for direct snacking, raw desserts and baked sweets. Each bean has a thin, tasteless stem on the surface, which we can (or do not have to) peel before consumption. We can roast them to enhance the taste. We can also crush or blend the cocoa beans into a powder. The cocoa tree comes from the Amazon and archaeological findings indicate that cocoa was used in what is now Ecuador 5,000 years ago. Although Africa now dominates world production, Ecuador is increasingly becoming a destination for gourmet chocolate makers. The local Arriba Nacional cocoa variety stands out with its full, slightly spicy taste and aroma with less bitterness. Our cocoa beans are purchased directly from farmers in several areas, which is why its color and taste can vary slightly.
