Finely ground, non-alkalized powder from unroasted Ecuadorian cocoa beans. The cocoa tree comes from the Amazon and archaeological findings indicate that cocoa was used in what is now Ecuador 5,000 years ago. Although Africa now dominates world production, Ecuador is increasingly becoming a destination for gourmet chocolate makers. The local Arriba Nacional cocoa variety stands out for its full, lightly spiced flavor and aroma with less bitterness. Our cocoa is purchased directly from farmers in several areas, which is why its color and flavor can vary slightly. Unlike regular cocoa powder, the beans are not roasted, but after fermentation, drying and cleaning, they are crushed straight away and removed from the cocoa butter using a press. They are then ground into a fine powder. We use this powder just like regular cocoa from roasted beans for cooking, baking and making hot drinks. It is also suitable for raw cuisine.

Raw vegan cocoa: pour 80 g of almonds with warm water and let stand overnight. In the morning, drain, rinse, add a few drops of virgin oil, pour 300 ml of warm water and mix thoroughly. Then strain through a cloth, add 3 teaspoons of unroasted cocoa, a pinch of sea salt, agave syrup to taste and whisk.
