Cane molasses is an almost black syrupy substance that is produced as a by-product of the production of cane sugar from sugar cane juice. In addition to sugar, cane juice naturally contains biologically active substances necessary for its digestion. However, these remain in the syrup that remains after separating the sugar crystals from the concentrated cane juice, i.e. molasses. The wider use of molasses is prevented by its strong taste, which most people find objectionable. Therefore, they prefer natural cane sugars, to which molasses, on the other hand, gives a pleasant taste and aroma. And that is its secret. In small quantities, molasses has a very pleasant taste and, moreover, enhances the natural taste of food. It is therefore a shame to make molasses distasteful by consuming a few prescribed spoonfuls of it a day. Its strong taste is best used as part of prepared dishes. Therefore, don't reject molasses until you've tried it in gingerbread, strudel (cinnamon, apples, and nuts complement its flavor wonderfully), cookies, or in hot mixtures (along with curry or hot peppers, tomato puree, and even mustard). You can add a little molasses to milk or yogurt as a topping for muesli or cornflakes, honey or fruit teas.
