Bourbon vanilla is grown only on the islands of the Indian Ocean (the so-called Bourbon Islands) and is valued for its distinctive, pleasant aroma. Growing, harvesting and fermenting vanilla requires a lot of experience, care and time. Vanilla pods are harvested green and after harvesting they ferment for several months to fully develop the characteristic vanilla aroma. Bourbon vanilla stands out for its naturally high content of aromatic substances, which can even crystallize on the surface as small white crystals. This is a sign of high quality, not a defect in the product! We use the vanilla pod by cutting it open and adding the tiny grains inside the pod a pinch to desserts, puddings, pastries, yoghurts or creams. The whole pod can be stored in granulated or powdered sugar. This not only gives the sugar a beautiful vanilla aroma, but it is also a good way to store the vanilla. We do not have to throw away the remaining pod without seeds. If we boil a piece of the empty pod briefly in milk when preparing porridge, cocoa or pudding, we will add a vanilla aroma to the dish.
