This vegetable stock cube does not contain yeast extract to enhance the taste. Its distinctive taste is given by a high proportion of several types of vegetables and spices. It differs from conventional products not only in that all ingredients except salt come from controlled organic farming, but also in that it contains sea salt instead of regular table salt, is flavoured only with vegetables and herbs and does not contain any flavour enhancers, protein hydrolysate, gluten, milk, lactose or cholesterol. RAPUNZEL is constantly improving the composition of its products and has therefore replaced fair trade palm oil with shea butter. One cube is enough to prepare 1/2 l of stock. We use it not only to prepare clear stock, but also as a base for soups, to flavour sauces and vegetable dishes. It can also be used in marinades for meat and to flavor herb rice, risotto, etc.
What is yeast extract: Yeast extract (yeast extract), soy extract, protein extract (but also soy sauce), etc. have in common that they contain free amino acids (their salts), including glutamates. What this means: Proteins (in meat, but also, for example, in soy, etc.) are composed of amino acids. They are actually long strings of amino acids linked together. When we eat any food containing protein (e.g. meat), the protein begins to break down into individual amino acids in the stomach. These free amino acids enter the blood and are used or broken down. One of these amino acids is glutamic acid, which is very useful in the body. So far, everything is fine. When we take soy and let it ferment in a certain way, the proteins present in it are broken down and practically the same thing happens as in our stomach. The result is a very pleasant taste, for which we use soy sauce. The amino acids from it then enter the blood again and are processed. The last example is the isolation of pure glutamate - the protein is broken down and glutamate is isolated directly from it, which is then added to food and marked on the label with the code E 621. Now the question is what our body does with it. It seems that some people are very sensitive to monosodium glutamate, especially in larger quantities on an empty stomach (Chinese restaurant syndrome). Some people are also sensitive to protein hydrolysates, but even to soy sauce (the one that does not contain added E 621) and to foods that naturally contain a higher amount of free glutamate (e.g. parmesan). Of course, they must avoid all foods with hydrolysed protein. The rest of us can decide what still feels natural to us and what we no longer want to eat :-).

PREPARATION: Dissolve one cube in half a liter of boiling water or add to season while cooking.
