Basmati is popular for its typical noble aroma and taste. Its long and narrow grains are fluffy, loose and firm when cooked. It is very versatile and its taste goes well with many dishes. However, it is unrivaled as a side dish for spicy Indian sauces. True basmati rice comes exclusively from India or Pakistan and the name basmati is a protected designation. Dishonest traders sometimes refer to ordinary long-grain rice as basmati.
Basic preparation: Rinse two cups of rice in cold water and add less than two cups of cold water and salt and slowly cook until soft (approx. 16 minutes).
