Black pepper is a winding, evergreen vine growing up to four meters long. The plant comes from the Indian subcontinent from the Malabar Coast. Black pepper has been spread to many tropical countries, today the largest growers include Vietnam, India, Indonesia and Sri Lanka. Its leaves are alternate, glabrous, ovate to elliptical, growing up to 10 cm long and 5 cm wide. The raceme inflorescence is made up of small flowers. The fruit is a 4 mm berry containing a single seed. The harvested part is the fruit, which is known according to the processing method as black, white or green pepper.
Salvia Paradise® brings you green pepper, which, unlike conventional black pepper, is harvested unripe and unfermented. It retains its green color by quickly drying immediately after harvest. Green pepper has a milder aroma and taste than black pepper.
Usage:
Whole green pepper is particularly suitable for pickling (e.g. cheese and vegetables) and crushed for preparing marinades for steaks or as a special addition to sauces. The balls are soft, which is why they are suitable for pâtés, homemade cheeses or stuffings.
